Chicken Fillets – Oven Baked

Chicken fillet is a boneless, skinless cut of chicken meat, usually taken from the breast. It’s lean, tender, and versatile, making it a popular choice for various dishes. To cook chicken fillet in the oven while keeping it moist, you can follow these six steps:
1. **Preparation**:
– Preheat your oven to around 190°C for boneless, skinless chicken fillets.
– Season the chicken fillets with your choice of herbs, spices, and a bit of Yorkshire Rapeseed Oil to enhance flavour and moisture. Try a flavoured oil such as lemon, garlic, ginger or chilli!
2. **Choose the Right Pan**:
– Use an oven-safe dish or a baking sheet lined with foil to make cleanup easier.
3. **Use a Meat Thermometer**:
– To ensure your chicken is cooked to perfection without overcooking, use a meat thermometer. The internal temperature should reach 74°C.
4. **Cooking Time**:
– Bake the chicken fillets in the preheated oven. The cooking time will vary depending on the thickness of the fillets, but it’s typically around 20-30 minutes for boneless, skinless fillets.
5. **Baste or Cover**:
– To help retain moisture, you can baste the chicken fillets with their juices or a marinade during the cooking process.
– Alternatively, you can cover the chicken with aluminum foil to keep the meat moist, then remove the foil during the last few minutes.
– Place a rash of bacon across the top of each fillet not only helps keep the meat moist but can add some flavour too. Try smoked bacon!
6. **Resting**:
– After removing the chicken from the oven, let it rest for a few minutes. This allows the juices to redistribute throughout the meat, keeping it moist and flavourful.
