Roast Pork with Crispy Crackling

The Sunday Roast is one of life’s great pleasures and we are happy to share our top tips for the perfect roast pork complete with crispy crackling. Speak to our butchers when you buy your cut of pork, they are always happy to advise and will score the skin for you.
To get great crispy pork skin, you can follow these steps:

1. Choose the right cut: Start with a cut of pork that has a good layer of skin, like pork belly from Anna’s Happy Trotters. Make sure the skin is dry, as moisture can prevent crispiness.
2. Ask the butchers to score the skin or use a sharp knife to score the pork skin. Make shallow, parallel cuts about 1/2 inch apart. This helps the skin crisp up by allowing the fat to render out.
3. Dry the skin: Pat the skin dry with paper towels to remove any excess moisture. This is essential for achieving crispiness.
4. Salt the skin: Rub the skin with salt, which will help draw out more moisture and contribute to the crispiness. You can also season with additional herbs and spices as desired.
5. Preheat the oven: Preheat your oven to a high temperature, typically around 220-230°C
6. Roast at high heat: Place the pork in a roasting pan, skin side up, and roast at the high temperature for the initial phase, usually around 20-30 minutes. This will help the skin start to puff and crisp up.
7. Lower the temperature: Reduce the oven temperature to around 160-175°C and continue roasting until the pork is cooked through. This lower temperature allows the meat to cook without overcooking the skin.
8. Monitor the skin: Keep an eye on the skin during roasting to prevent burning. If it starts to brown too quickly, you can cover it loosely with aluminum foil.
9. Rest and serve: Once the pork is cooked to your liking, let it rest for a few minutes, uncovered, before slicing. This will help maintain the crispiness of the skin.
