Roast Rolled Loin of Pork and Cauliflower Steaks

Roast rolled loin of pork and cauliflower steaks
A “rolled loin of pork” typically refers to a cut of pork taken from the back of the pig, boned, and then rolled. It’s a lean and tender cut of meat that can be prepared in various ways, such as roasting, grilling, or pan-searing. This superb pork sourced from Anna’s Happy Trotters goes well with cauliflower steaks and a creamed jus.
1. Preheat your oven to 190°C
2. In a small bowl, mix the minced garlic, dried thyme, salt, pepper, and 2 tablespoons of soy sauce and 2 tablespoons of Yorkshire Rapeseed Oil to create a pork loin marinade. Rub this mixture all over the pork loin.
3. Heat an ovenproof skillet or pan on the hob over medium-high heat. Add a bit of oil and sear the pork loin on all sides until it’s browned.
4. Remove the pork loin from the skillet and place it on a cutting board.
5. Meanwhile, slice the cauliflower into “steaks” and dust with paprika or spices of choice.
6. Place the cauliflower steaks on the skillet you used for the pork.
7. Place the seared pork loin on top of the cauliflower steaks.
8. Roast in the preheated oven for about 30-40 minutes or until the pork reaches your desired level of doneness (safe internal temperature is 63°C).
9. Remove from the oven and let the pork rest for a few minutes before slicing.
10. Serve the sliced pork loin on top of the cauliflower steaks.
