Roots Roast Lemon Chicken

Roast chicken remains a classic crowd-pleaser, enjoyed in various ways and is a great value meal. Whether you’re a lemon-lover or prefer herb-infused flavours, there’s a roast chicken recipe for everyone!  All ingredients are available in Roots Farm Shop.

How to make our recipe for Lemon Roast Chicken.
Preheat your oven to 220C
Cut off the wing tips and leg tips below the joint and use these to create a trivet to stand the chicken on in the pan. (This will let the hot air of the oven flow around your chicken for a more even roast).
Rinse the chicken inside and out, then pat it dry with paper towels.
Massage lemon flavoured Yorkshire Rapeseed Oil all over the chicken.
Season the chicken generously
Place a halved onion with a few sprigs of thyme inside the chicken cavity.
Put a few slices of lemon on the chicken and drizzle over the lemon juice.
Roast for 10 minutes at 220C, then 20 minutes for every 500g at 180C until the internal temperature is 75C or until juices run clear.
Let the chicken rest for 10 minutes before carving.
Serve with the pan juices or use the juices to make up a gravy.
